Abstract

Recent research shows that although the average person in the UK eats about 1lb of red carcase meat every week, some housewives don't make an informed choice of meat and many of them don't know the best ways of cooking what they have bought. In the average British household, about one quarter of the total food budget is spent on meat alone, and yet it appears that only a minority are getting the best from meat.
