Sausage history

Article Type: Food facts From: Nutrition & Food Science, Volume 39, Issue 1

The history of the sausage goes back at least 5,000 years to Sumeria (modern day Iraq) and by 900 BC sausages were consumed like popcorn might be today and later were sold from sellers in the aisles of the ancient Greek theatre. Sausages were driven underground in AD 320 when the Roman Emperor Constantinus I and the Catholic Church banned sausages because of their links to pagan festivals. It was in the reign of Charles I that sausages were divided into links for the first time. During the Second World War sausages picked up the nickname bangers because when fried they used to explode with a bang (probably due to a higher water content).
