The proceedings from CCFRA’s recent international conference on food microbiology are now available. Containing a short summary of each presentation together with copies of many of the visual aids used during the event, the proceedings provide an overview of recent microbiological developments of particular interest to the food and drink industry.

With distinguished speakers of international renown drawn from UK, Europe and USA, the conference covered food safety issues – such as the pathogens Enterobacter sakazakii and Mycobacterium paratuberculosis – and assessed recent developments with microbiological criteria and specifications. It also took stock of developments in relation to product microbiological stability and shelf-life, and assessed the potential and reality of emerging technologies such as high pressure processing and irradiation.
